Coriander Pulao (Simple and tasty SUNDAY Brunch idea)

Sunday time is Biryani or Pulao time in my house , with boondi raita ,potato chips or Paapad.Flavoured rice makes our Sunday super special.And this Sunday I made some coriander pulao.Had some bunches of coriander left so decided to do it right away,which is super easy to make and very delicious to eat.
The ingredients required for making this simple , easy delicious Coriander pulao.

  1. Two to three bunches of coriander.
  2. Two medium sized potatoes.
  3. 3 medium sized onions (thinly sliced)
  4. Ginger -One inch
  5. One cup Basmati rice.
  6. Cashew -a handful
  7. Jeera/Cumin  -One Tablespoon
  8. Curd- 3 Tablespoons
  9. Oil -5 Tablespoons
  10. Salt to taste 
  11. Pinch of sugar 
Serves -3 Adults
Preparation Time -40 min including dicing and miscellaneous stuff
Preparation Procedure/Method :

1.In a pressure cooker ,cook the basmati rice .Along with it in another bowl in the pressure cooker , steam some potatoes as well.
2.In the mean time , cut the root part of the coriander bunch .Wash the coriander bunch thoroughly; cut it wee bit , so that it would be easy to grind them to a paste in a mixer grinder.
3.Grind the coriander to a paste and while doing so , add curd to it as well.Keep Aside.
4.In a pan heat 5 tablespoons oil and to it add Jeera/cumin seeds and as they heat up , add onions which have been thinly sliced .Add pinch of sugar and saute until translucent.
5.Now add coriander paste and mix well.
6.To this add the pressure cooked potatoes in small cubes.
7.Cook these on medium flame for about 5 min , until the coriander has changed the bright green colour.
8.Finally add cooked Basmati rice and mix gently until the mixture blends well with rice.Cover with lid and keep on a low flame for about 3-4 minutes.
8.Serve with bondi raita /chips or fried bread crumbs.
